Dave, I'm the same way. Usually don't make many trays due to the box being "finished" and making trays is often more work than the box.
There also is the "mistakes". I had to make three extra runs of 1/4 cherry (resaw, sand, cut, rabbet the bottoms, etc.) because I kept screwing up.
