The LEDs are a good idea, you can shape them as needed. Hopefully you can figure a good way to place the dimmer and power supply.

I thought it was worth departing from the old lighting components since the LED strips won't be visible unless you lean over the top to see them. I think that the more uniform lighting will be an improvement.
