Results with expired Old Brown Glue?

So like maybe a few others, I'm here the day before Christmas trying to pull off a pretty large project for my daughter.  I'd like to use the hide glue I have. But I read where it's not advisable to use it if expired.  What are the cons to using it if expired?  Thanks. 
from what ive read you can if it looks to be good but may not have the bonding strength ? youd probably wanna do a test first, but sounds like you dont have the time ?

Ha yeah, we're already in the natural finish stage. Lol. 

I have a couple of minor glue ups, so I'll try it on that and see what happens. 
Does it smell like glue or like a critter crawled into the heat ducts and died? If the former, use it. If the latter, might be worth running to the store.

Rub some between your thumb and finger, then start tapping them together.  If fine strands of glue begin to form, it's still good.

So I applied some after heating it up and it spread fine.  The squeeze out started to gel up and look like a booger.  Is that normal or am I screwed?  It does start to get tacky on my fingers . 
I keep mine in the fridge and have never had a problem well past its date.  Well, I never actually look at the date so I am not absolutely sure but my current bottle is several years old and I used some a couple of weeks ago without issue.  I do give it Dave's sniff test every now and then.
