Interesting. I think I can see what you are doing. I'm more caveman than most, so I still just work down to a drawn line if I am using handtools, but with a blended shop this would be done with power. 

I can appreciate the little things like this that hand tool users need to do though. 

A nice thing about a jig like that, if it’s set up correctly, is that it will help keep consistent thickness throughout the piece…which can be a challenge some times with hand place. Nice jig!

This jig is intended to use with small to medium size box parts. As GeorgeWest mentions for larger stuff I normally scribe a line with my marking gauge and hand plane down to it. 
But it is very accurate and very useful. It's more accurate then my Ridgid thickness planer.  Approach depends upon what your are doing. 

Yes, job at hand often describes the method used to get there.
